Here’s a quick story – John and I met each other in Atlanta, Georgia. We worked for the same company here in the Philippines and we were both assigned to work onsite for some months. Back in Atlanta, there was a small Filipino community, comprised mainly of our other colleagues. Whenever they are about to return to the Philippines, we usually hold a small going-away party. Buffalo wings became a staple in those parties. Almost always, someone would volunteer to drop by the nearest wings restaurant and grab a box or two.
When we went back here in the Philippines, it felt like a vital part of our lives were missing. We spent a couple of sleepless nights thinking about this and concluded that it was the buffalo wings after all. Our lives lost all meanings when we parted with Atlanta’s buffalo wings. Ha! But kidding aside, we really missed the wings. Truly, you will only learn the true value of something after you lost it.
So enough with the unexpected emotional outburst. We tried a couple of wings restaurants here in Manila in search for something that can kiss our cravings goodbye. We managed to find some that’s similar with the ones in Atlanta but from time to time, we’ll have rants and so much wishful thinking. How I wish that the wings were more spicy and more savory also! I wish they have celery so my wings experience is complete! I wish that the wings in that restaurant don’t cost that much! To end this, John persisted to discover THE Wings Recipe that we’re looking for. I am happy girl! 🙂
For this recipe, we can’t seem to find a hot sauce mimicking that of the wings in Atlanta. Because of this, we used a combination of two hot sauces available in supermarkets here – Jufran and Tabasco. We loved the Tabasco Pepper Sauce because of its chili sour taste while we adore Jufran for its fiery bite from locally-grown chilies. You are free to tweak these two according to your preference.
- 1 lb Chicken Wings
- 1/2 cup Flour
- 1/4 tsp Cayenne Pepper
- 1/4 tsp Paprika
- 1/4 tsp Garlic Powder
- 1/8 tsp Pepper
- 1/2 tsp Salt
- 1/2 stick Butter, unsalted
- 3 tbsp. Jufran Hot Sauce
- 1 tbsp. Tabasco Pepper Sauce
- Cooking Oil
For the hot sauce:
- In a pan over medium heat, melt the butter.
- Add the Jufran hot sauce, Tabasco pepper sauce, garlic powder and pepper, stirring constantly until completely. Set aside the sauce in a bowl with a lid.
For the chicken:
- Mix flour, salt, cayenne pepper and paprika in a bowl.
- Coat the chicken wings with the mixture from (1) and fry them in a pan over medium heat.
- Mix the cooked chicken and hot sauce prepared earlier and shake them in a bowl with a lid.
- Serve with a blue cheese or Ranch dressing and enjoy!
